2 pkgs My Better Batch Classic Sugar Cookie Mix
- 16 TBSP unsalted butter, softened
- 2 large eggs
- Peppermint extract
- Red food coloring
- Red and white sparkling sugar

Let's get baking! Preheat your oven to 375°F. Don't forget to line your pans with parchment paper—it's a lifesaver!
Combine the Cookie Ingredients
In a large bowl, combine 2 packages of Classic Sugar Cookie Mix, 16 tablespoons of unsalted butter, softened, and21 large eggs. Using a mixing stand or hand mixer, combine the ingredients by mixing on medium speed for 2-3 minutes.
Once fully combined, split the dough into two portions.
Place one half back in the mixing bowl. While the mixer is running slowly, add red food coloring until you achieve your desired hue. Then, add 1 teaspoon of peppermint extract and combine.Form the Peppermint Cookie Mashups, Decorate, and Bake
Scoop 1 tablespoon of the regular sugar cookie dough and roll it gently into a ball. Repeat this process with the remaining regular dough.
Next, scoop 1 tablespoon of the peppermint sugar cookie dough and roll it into balls in the same way.
Once you have all the dough balls ready, take one regular dough ball and one peppermint dough ball. Gently roll them together to form a single, larger cookie ball, creating a swirled effect.
Roll each larger cookie ball into a bowl containing a mix of red and white sanding sugar until covered.
Then, place onto a prepared cookie sheets, with 2 ½ inches between each ball of dough.
Bake for 9-11 minutes, until the cookie edges have set. Allow the cookies to rest on the baking sheet for an additional 5 minutes before transferring to a wire cooling rack.
