1 pkg My Better Batch Classic Sugar Cookie Mix
- 1 Large Egg
- 8 TBSP Unsalted Butter, Softened
½ Cup Sugar

- 2 TBSP Sugar
- ½ Cup Fresh Strawberries (cut into small pieces)
- 2 Cups Powdered Sugar
- 1 tsp Vanilla
Directions
Start by preheating your oven to 375°F. If you’d like to make clean up easy, consider lining your baking sheets with parchment paper. Pour ½ a cup of sugar in a small bowl.
Begin by combining 1 pkg of Classic Sugar Cookie Mix, 8 tablespoons of softened, unsalted butter, and 1 large egg in a medium or large mixing bowl. If using an electric stand or hand mixer, mix on slow to medium speed for 2-3 minutes until the dough is formed.
Take two tablespoons of dough and gently roll into a ball. Roll each ball into the bowl of sugar to apply a light coating. Then place directly on the prepared cookie sheets, 2 ½ inches apart.
Bake the cookies for 9-11 minutes, or until the edges have set.
While the cookies are baking, prepare the frosting.
To prepare the fresh strawberry frosting, start by combining water, strawberries, and sugar in a small saucepan over medium heat. Whisk the mixture for 5–8 minutes, allowing the sugar to dissolve and the strawberries to soften.
Once the strawberries are tender, mash them gently with a fork or whisk to release their juices. Remove the saucepan from the heat and let the mixture cool completely.
Once cooled, transfer the strawberry mixture to a medium bowl and add the powdered sugar and vanilla extract. Whisk everything together until the frosting is smooth and creamy. If the frosting is too thick, add a few drops of water to thin it out; if it’s too thin, mix in a bit more powdered sugar until you reach your desired consistency.
Once the cookies have cooled, use a spoon to spread the frosting on top!
