1 pkg My Better Batch Classic Sugar Cookie Mix
- 1 Large Egg
- 8 TBSP Unsalted Butter, Softened
- 1 pkg Reese’s Peanut Butter Cups
Directions
Preheat your oven to 375°F. Grease a mini muffin pan or line with cupcake liners.
Unwrap ~32 small Reese’s peanut butter cups. You have two options - if you like your chocolate to melt, you can leave the peanut butter cups at room temperature. If you prefer them not to melt as much, place them in the freezer until needed.
In a large mixing bowl, place the contents of one package of Classic Sugar Cookie mix, 1 large egg, and 8 tablespoons of unsalted butter that has been softened. Using a stand or hand mixer, combine the ingredients on medium-low speed until dough forms.
Take1 tablespoon of cookie dough and place each in the mini muffin tin. Bake for 6-8 minutes. If you’ve put your peanut butter cups in the freezer, remove them a minute or two before the cookies are done.
Remove from the oven and immediately (and carefully) press a single peanut butter cup into the center of each cookie. Allow the cookie cups to rest in the muffin pan for 10 minutes before removing.
