Directions
Prepare the Cookie Dough
Combine My Better Batch Classic Sugar Cookie Mix, 8 TBSP Unsalted Butter, softened, and 1 Large Egg in a stand mixer bowl. Mix on medium-low speed for 2 minutes, or until well combined. Keep in mind this could take several minutes and may look like a dough will never form. Be patient, this process could take up to 2-3 minutes.

Once the dough begins to form, add 2 pouches of Freeze-Dried Strawberries, 2 teaspoons lemon zest, and 1 teaspoon lemon juice. Mix on medium-low speed until fully combined.
The freeze-dried strawberries will break down as the dough is mixed. To expedite the process, consider pressing on the pouches to break the strawberries into smaller pieces before adding them to the mixer.Prepare the Baking Sheet and Form the Strawberry Lemonade Cookie Balls
Scoop approximately 2 tablespoons of cookie dough and roll into a ball.
Roll the cookies in sugar before baking - this adds both texture and flavor to the final product.
