Strawberry Lemonade Sugar Cookies

Ingredients

  • 1 pkg Classic Sugar Cookie Mix

  • 8 TBSP Unsalted Butter, Softened

  • 1 Large Egg

  • 2 (12g) Bags Freeze Dried Strawberries

  • 2 tsp Lemon Zest

  • 1 tsp Lemon Juice

  • 1/4 Cup Granulated Sugar (for rolling)

Directions

  1. Prepare the Cookie Dough

    Combine My Better Batch Classic Sugar Cookie Mix, 8 TBSP Unsalted Butter, softened, and 1 Large Egg in a stand mixer bowl. Mix on medium-low speed for 2 minutes, or until well combined. Keep in mind this could take several minutes and may look like a dough will never form. Be patient, this process could take up to 2-3 minutes.

  2. Add Strawberries and Lemon to the Cookie Dough

    Once the dough begins to form, add 2 pouches of Freeze-Dried Strawberries, 2 teaspoons lemon zest, and 1 teaspoon lemon juice. Mix on medium-low speed until fully combined.

    The freeze-dried strawberries will break down as the dough is mixed. To expedite the process, consider pressing on the pouches to break the strawberries into smaller pieces before adding them to the mixer.

  3. Prepare the Baking Sheet and Form the Strawberry Lemonade Cookie Balls

    Scoop approximately 2 tablespoons of cookie dough and roll into a ball.

    Roll the cookies in sugar before baking - this adds both texture and flavor to the final product. The sugar creates a delicate, sweet crust on the outside of the cookies, which adds a slight crunch that contrasts beautifully with the soft tangy interior. As the cookies bake, the sugar caramelizes slightly, enhancing the sweetness and giving the cookies a subtle, golden-brown finish.

    Place onto an ungreased cookie sheet or parchment-lined baking sheet, about 2 ½ inches apart.

  4. Bake

    Once the temperature has reached 375°F, put the cookies in the oven. Bake for 9-11 minutes under the edges of the cookies have set. Allow the cookies to sit for 5 minutes before removing them from the baking sheet.
