1 pkg My Better Batch Classic Sugar Cookie Mix
- 1 Large Egg
- 8 TBSP Unsalted Butter, Softened
- 5-6 cups Fresh Strawberries
- ½ cup of sugar
- 1 lemon (juiced)
Directions
Now, most of our recipes tell you to preheat your oven to 375°F, but for this recipe, we’re going to bake at a slightly lower temp, 350°F. This will give the fruit time to soften and bubble, while still allowing the cookie dough to cook completely.
While the oven is warming up, put one package of Classic Sugar Cookie Mix, the egg, and 8 tablespoons of unsalted butter that has been allowed to soften into a mixing bowl. Using a stand or hand mixer, blend the ingredients until a dough is formed. Be patient, this could take 2-3 minutes!
Once the dough is prepared, set it aside.
Slice the fresh strawberries into quarters and put the quarters into a separate mixing bowl. Sprinkle in the ½ cup of sugar and the lemon juice. Stir, making sure the berries are fully coated.
Now that your fruit filling is ready, it’s time to assemble the cobbler! Grab whatever baking dish you have on hand - whether it’s a glass dish, a ceramic pan, or even a cast iron skillet - they’ll all do the trick.
Pour the fruit across the bottom of the dish and spread evenly.
Take the prepared cookie dough and begin to break it into pieces, placing it on top of the fruit filling. Continue until the berries are covered - depending on the size of your dish, you may not use all of the cookie dough.
Bake for 28-32 minutes until the strawberries are bubbling and the cookie topping has set and is golden brown.
