Directions
To get started, preheat your oven to 375°F. Grease a muffin pan or line with cupcake liners.
In a mixing bowl, combine the Classic Sugar Cookie Mix, one egg, and 8 tablespoons of softened unsalted butter. If using a stand or hand mixer, combine on medium-low until the ingredients are fully combined. If you don’t have a mixer, you can hand-knead the ingredients until the dough forms.
Take one tablespoon of dough and place it into the prepared muffin pan. Using your thumb or the back of a spoon, gently press the dough into the bottom of the pan. Bake for 6 - 8 minutes. After removing from the oven, and while the cookies are still hot, use a measuring spoon to press into the middle of the cookie, creating a “well”.
Allow the cookie cups to rest in the pan for 10 minutes before removing them.
Once the cookie cups have cooled, pipe or spoon cool whip into each one. Top with patriotic sprinkles and enjoy!
