Cookie Recipe Directions
Preheat the Oven and Prepare Baking Sheets
Start by preheating your oven to 375°F (190°C). Line your baking sheets with parchment paper to make transferring and cleaning up easier. This not only saves time but helps ensure even baking.
Remove Excess Moisture from the Pumpkin Puree
Pumpkin puree often has more moisture than needed for cookies, which can lead to a cakier texture. To avoid this, spread your measured pumpkin puree onto a plate and gently press with a paper towel to absorb the excess moisture. You’ll be surprised how much liquid you can remove this way, helping you achieve perfectly chewy cookies.
Mix the Ingredients
In a large mixing bowl, add:
1 package of My Better Batch’s Sugar Cookie Mix
6 tablespoons of softened unsalted butter
1 large egg
1/4 cup + 2 tablespoons of prepared pumpkin puree
1 teaspoon of pumpkin pie extract (for that extra burst of fall flavor)
Using a stand mixer or hand mixer on medium speed, blend the ingredients until there are no dry spots, and you have a smooth, even dough. If you prefer a hands-on approach, feel free to knead the dough by hand. (Check out our Classic Sugar Cookie Mix video to see this technique in action!)Shape and Coat the Cookie Dough
Scoop out 2 tablespoons of dough and roll it into a ball. For added sweetness and a touch of texture, roll each ball in granulated sugar before placing it on the baking sheet. Be sure to leave about 2 ½ inches of space between each ball, as these cookies will spread as they bake.
Bake and Cool
Bake the cookies for 9-11 minutes or until the edges are just turning golden. This will give you a soft, slightly chewy center with just the right amount of crunch at the edges. Allow the cookies to cool on the baking sheet for about 5 minutes before moving them to a wire rack to finish cooling completely.
Brown Butter Frosting Directions
Brown the Butter
In a small saucepan over medium heat, melt the butter. Continue to cook, stirring frequently, until the butter begins to foam and turns a rich golden-brown color with a nutty aroma. This usually takes about 4-5 minutes. Turn heat down to low.
Dissolve the Brown Sugar
Add the brown sugar to the same saucepan. Stir in the heavy cream. Stir to combine.
Turn heat up to medium low, stirring constantly, until the mixture is smooth and begins to bubble. Allow it to cook for about 1-2 minutes, then remove from heat.Combine Ingredients
Pour the mixture into the bowl and allow to cool. Gradually add the powdered sugar, mixing continuously until smooth and creamy. If the frosting is too thick, add a bit more cream (a tablespoon at a time) until you reach your desired consistency.
Frost and Enjoy
Use the frosting immediately for a warm, glossy look, or let it cool for a slightly thicker consistency. Spread over your favorite cookies, cakes, or any treats that could use a touch of rich, caramelized flavor!
