These Peach Cobbler Cookies combine the ease of My Better Batch Sugar Cookie Mix with juicy peaches, a buttery crumble topping, and a sweet vanilla glaze. Perfect for summer gatherings, BBQs, or whenever you crave peach cobbler - without all the work and in a fraction of the time!

1 pkg My Better Batch Classic Sugar Cookie Mix
- 1 Large Egg
- 8 TBSP Unsalted Butter, softened
- 2 cups Fresh Peaches, diced (about 2–3 medium peaches)
Crumble Topping

3/4 Cup All-Purpose Flour
- 1/3 Cup Light Brown Sugar
- 1/2 tsp Cinnamon
- 5 TBSP Unsalted Butter, Melted
Glaze
-
1 cup Powdered Sugar
- 6 tbsp Heavy Cream (or milk for a lighter glaze)
- 2 tsp Vanilla Extract
Directions
Preheat your oven to 375°F and line two baking sheets with parchment paper.
In a large mixing bowl, combine one box of My Better Batch Sugar Cookie Mix with 8 tablespoons of softened butter, and 1 large eg,, stirring until a soft dough forms. If using a hand or stand mixer, mix on medium-low for 2-3 minutes.
In a separate bowl, prepare the crumble topping by mixing ¾ cup of all-purpose flour, ⅓ cup of light brown sugar, and ½ teaspoon of cinnamon, then pour in 5 tablespoons of melted unsalted butter and stir until the mixture forms large crumbs.
Scoop 1 ½ - 2 tablespoons of cookie dough and gently roll into a ball, placing each one onto your prepared baking sheets, leaving 2 ½ inches between each cookie. Use a measuring spoon or small measuring cup to gently create an indentation in the middle of the cookie. Use a spoon to fill with peaches and top each cookie with about 1 teaspoon of the crumble mixture, pressing it in lightly so it sticks.
Bake for 11 to 12 minutes, or until the edges of the cookies are golden and set. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.
While the cookies cool, whisk together 1 cup of powdered sugar, 6 tablespoons of heavy cream (or milk), and 2 teaspoons of vanilla extract until smooth.
Once the cookies are completely cool, drizzle the glaze over the tops and enjoy!
