Peach Cobbler Cookies

 Enjoy all the flavors of Peach Cobbler in the form of a cookie. This over-the-top cookie has a Brown Sugar Cookie base topped with fresh diced peaches, a crumble topping, and is finished off with a generous drizzle of vanilla glaze. It's JUST peachy!

Peach Cobbler Cookie

Cookie

1 Cup Unsalted Butter, Softened
3/4 Cup Granulated Sugar
1/3 Cup Dark Brown Sugar
1 Egg 1
1/2 tsp Vanilla Extract
2-3/4 Cups All Purpose Flour
1 tsp Cinnamon
1 tsp Baking Soda
1/2 tsp Salt 1/2 tsp Baking Powder
2 Cups Peaches, Diced (~2-3 Medium Peaches)

Crumble Topping

3/4 Cup All Purpose Flour
1/3 Cup Light Brown Sugar
1/2 tsp Cinnamon
5 TBSP Unsalted Butter, Melted

Glaze

1 Cup Powdered Sugar
6 TBSP Heavy Whipping Cream
2 tsp Vanilla Extract

Cookie

In a medium size bowl, combine all dry ingredients: Flour, Cinnamon, Baking Soda, Salt, Baking Powder. Using a whisk, gently combine the dry ingredients and set aside.

In a large bowl, cream together butter and sugars using a stand mixer with paddle attachment or a hand mixer. Once fully combined, add egg and vanilla extract and mix for another 30-45 seconds. Add dry ingredients to wet ingredients about 1/3 at a time until all dry ingredients are fully added and all ingredients are combined. Using a 3 TBSP cookie scoop, scoop 4 cookies onto each cookie sheet.

Using a small measuring cup or spoon, create a small indentation in the middle of each cookie and fill with 1 TBSP diced peaches.

Crumble

In a medium bowl, add all ingredients: Flour, Brown Sugar, Cinnamon, and Melted Butter. Using a hand mixer, mix all ingredients together until a crumble consistency forms. Top each cookie with ~1 tsp Crumble Topping. Bake at 375 degrees for 11-12 minutes.

Glaze

In a small bowl, combine all ingredients with a whisk:
Powdered Sugar
Heavy Whipping Cream
Vanilla Extract.
When cookies are completely cooled, drizzle the top of each cookie with glaze. Allow to set for ~30 minutes before serving. Enjoy!
