Directions
Start by putting on your favorite holiday playlist - because baking these cookies deserves a festive soundtrack!
Preheat your oven to 375°F and line a baking sheet with parchment paper.
In a medium bowl, combine the My Better Batch Chocolate Peppermint Cookie Mix with 8 tablespoons of softened unsalted butter and one egg. Mix on low speed with a hand or stand mixer until the dough comes together - rich, smooth, and loaded with chocolatey peppermint goodness.
Scoop the dough onto your prepared baking sheet, spacing each cookie a couple of inches apart so they have room to spread. Bake until the edges are just set and the centers still look soft and fudgy, about 9-11 minutes. Let them cool on the baking sheet for five minutes, then transfer to a wire rack to cool completely.
While the cookies are cooling (and your kitchen smells like pure holiday magic), whip up the minty mistletoe frosting.
In a large bowl, beat ½ cup of softened butter until creamy and smooth. Gradually add 3 cups of powdered sugar, alternating with 3 tablespoons of milk, until the mixture is light, fluffy, and easy to spread.
Stir in ½ teaspoon of mint extract and a few drops of green food coloring, blending until you’ve got that perfect holiday hue - think frosted pine or mistletoe leaves.
Next, melt your chocolate wafers according to package instructions and let them cool slightly, just enough so the chocolate is warm and silky, not hot.
Now here comes the fun part - assembling! Spread a layer of the cool, minty frosting on top of each cookie and add a generous layer of melted chocolate over the top. Use the back of your spoon to gently push the chocolate to the outer edges of the frosting leaving only a small amount of green frosting showing around the edges.
