Chocolate Sugar Cookies

Once your dough is prepared, place onto a parchment-lined, half-sheet pan and bake at 375 degrees for 15-17 minutes being careful not to over bake.

Ice Cream Prep

Allow your 1-Gallon Mint Chocolate Chip Ice Cream to sit on the counter for 15 mins or so to soften up, but not melt. Place the entire tub of ice cream into the base of your stand mixer with paddle attachment and mix on low-medium for about 30-45 seconds until it resembles soft serve ice cream. Place your ice cream onto a parchment-lined, quarter-sheet pan and put back in the freezer to harden up for 4 hours.

Assembly

Using a simple cookie cutter or biscuit cutter, cut the entire surface of your Chocolate Sugar Cookie. Using that same cookie cutter, cut your ice cream. Place ice cream in between two cookie layers and roll in mini chocolate chips.

HINT

The ice cream will begin to melt FAST! Assemble 2-3 sandwiches at a time and get them back into the freezer as quickly as possible. Allow them to set for 4 hours or overnight before serving. Enjoy!
