You're in for a treat making French Toast Cookies. Not only are these cookies delicious, they're also so easy to make! This cookie combines the flavors of maple and cinnamon in a classic sugar cookie base and is finished with a homemade maple icing.
French Toast Cookies
Cookie Dough
Sugar Cookie Mix
Using a stand mixer pour your Sugar Cookie Mix into the base of the stand mixer with paddle attachment and follow the package instructions.
16 oz mix that calls for 8 TBSP Softened Butter and 1 Egg.
Add before turning mixer on:
1 1/2 tsp Maple Extract
1/2 tsp Ground Cinnamon
1/4 tsp Ground Nutmeg Mix
Mix on medium-low speed until the cookie dough forms. This may take a few minutes and, at times, may feel like it will never come together. Give the dry mix some time to absorb the butter and egg. Your dough will look crumbly, but slowly those crumbs will get larger and larger until the dough forms.
Using a 1 1/2 TBSP scoop, scoop all of the cookies at the same time. Place 8 cookies onto each tray. Before placing into the oven, roll each dough scoop into a ball and roll that sugar cookie ball into granulated sugar. Bake in a 375 degree oven for about 9-11 minutes.
Maple Icing
In a medium bowl add:
1 1/2 Cups Powdered Sugar
3 TBSP Maple Syrup
1/2 tsp Vanilla Extract
2-3 TBSP Milk
Allow cookies to cool on a rack for about 15 minutes. It's important that you allow the cookies to cool before icing them to avoid all of the icing melting and sliding off of your cookie.
