What’s better than the classic combination of chocolate and strawberries? These Chocolate Covered Strawberry Cookies take the rich, chocolatey goodness of My Better Batch Chocolate Chunk Cookie Mix and elevate it with tangy freeze-dried strawberries and a luscious dark chocolate coating. And while Valentine’s Day may still be a few weeks away, there’s no better time to practice than during a cozy snow day!

1 pkg My Better Batch Chocolate Chunk Cookie Mix
- 1 large egg
- 6 TBSP unsalted butter, softened
- 3 (12 g) bags Freeze-Dried Strawberries (divided)
- 1 (10 oz) bag Dark Chocolate Melting Wafers
Directions
Preheat your oven to 375°F (190°C). Line your baking sheets with parchment paper or leave them ungreased.
In a medium-sized bowl, combine the cookie mix, softened butter, and egg. Use a stand mixer or hand mixer on medium-low speed to mix until a dough forms. Add two bags of freeze-dried strawberries and continue to mix on medium-low speed until the strawberries are evenly distributed throughout the dough.
Scoop out 2 tablespoons of dough, roll into a ball, and place onto your prepared baking sheet. Leave about 2 ½ inches between each cookie.
Bake for 9-11 minutes, or until the edges of the cookies have set.
Once baked, remove from the oven and allow the cookies to rest on the cookie sheets for 5 minutes, then transfer to a wire rack or plate to fully cool.
While the cookies are cooling, crush the remaining bag of freeze-dried strawberries into smaller pieces.
Melt the dark chocolate wafers according to the package instructions. Dip half of each cookie into the melted chocolate, letting the excess drip off. Place the cookies back on the cookie sheet or on a cooling rack.
Immediately sprinkle the cookies with the crushed freeze-dried strawberries. Allow the chocolate to set before enjoying.
