These Chocolate Turtle Cookies are everything you love about the classic candy, chocolatey, nutty, and just the right amount of sticky-sweet, baked into a warm, melty cookie. And the best part? You don’t need a candy thermometer or a culinary degree to make them. Just a mixing bowl, a handful of ingredients, and about 20 minutes.

Ingredients

1 pkg My Better Batch Double Chocolate Chip Mix
- 1 Large Egg
- 8 Tablespoons Unsalted Butter, Softened
- 1 bag Werther’s Soft Caramels
- 1 Cup of Pecans
Directions
For the perfect cookie, preheat your oven to 375°F. An optional but highly recommended step is lining your cookie sheets with parchment paper. This makes cleanup incredibly easy!
Unwrap 16 soft caramels.
Combine 1 package of Double Chocolate Chip cookie mix, 8 tablespoons of softened unsalted butter, and a large egg in a large mixing bowl. Use a mixer on medium speed to combine the ingredients until the dough forms. Take two tablespoons of the dough and gently roll into a ball.
Flatten each ball of raw cookie dough and in the center, place one soft caramel. Wrap the edges of the dough around the caramel, once again creating a ball but leaving a small opening at the top.
Place each completed dough ball, opening side up, 2 ½ inches apart on the baking sheets. Bake for 9-11 minutes, until the edges of the cookies have set and the caramels have melted. Remove from the oven and allow the cookies to rest on the baking sheets for 5 minutes before moving to a cooling rack. While the cookies are still warm, firmly press one pecan into the top.
