When life gives you lemons… make cookies! Bright, buttery, and bursting with citrus flavor, these Glazed Lemon Cookies are everything you didn’t know you needed in a springtime treat. They’re soft in the center, lightly golden on the edges, and finished with a tangy-sweet glaze that’s almost too easy to drizzle on everything in sight.
The best part? You don’t need to start from scratch. With one box of our My Better Batch Classic Sugar Cookie Mix and a little kitchen magic, you’ll have a batch of cookies that tastes like sunshine and effort but requires barely any of it. Perfect for last-minute gatherings, after-school snacks, or just because you want something delicious without the stress.
Ingredients
Cookie Ingredients
-
1 pkg My Better Batch Classic Sugar Cookie Mix
-
8 TBSP Unsalted Butter, Softened
- 1 Egg
- Juice of 1 Lemon (~2 TBSP)
Lemon Glaze Ingredients
-
1 Cup Powdered Sugar
-
2-3 TBSP Lemon Juice
-
1 tsp Lemon Zest
Directions
Preheat your oven to 375°F. To make cleanup easy, line two cookie sheets with parchment paper.
In a large mixing bowl, combine 1 package of Classic Sugar Cookie Mix, 8 tablespoons of softened unsalted butter, and 1 egg. Use a hand or stand mixer on medium speed to combine the ingredients. (You can also hand knead the cookie dough.)
Add the juice of one lemon and fully combine into the dough.
Using a spoon or a cookie scoop, take two tablespoons of prepared dough and gently roll it into a ball. Place each ball of cookie dough onto the prepared baking sheets, 2 ½ inches apart.
Bake for 9-11 minutes or until the edges of the cookies have set. Allow the cookies to rest on the baking sheet for 5 minutes before moving to a plate or cooling rack.
While the cookies are baking, combine 1 cup of powdered sugar, 2 tablespoons of lemon juice, and 1 teaspoon of Lemon Zest in a small bowl. Whisk until smooth.
Let the lemon sugar cookies cool completely on the baking sheet or a wire rack before glazing. (Trust us, the glaze slides right off warm cookies. Patience pays off!) Top each cookie with glaze and use a spoon to gently spread.
Let the glaze set for about 15–20 minutes (if you can wait that long!) before enjoying.

Make It Yours - Ideas for Twists on a Classic
One of the best things about starting with My Better Batch Classic Sugar Cookie Mix is how easy it is to add your own spin. This Glazed Lemon Cookie recipe is already a flavor upgrade, but if you’re feeling a little extra, here are a few fun ways to mix it up:
Try a citrus swap: Not a lemon lover? Use orange or lime zest and juice instead for a slightly different (but just as delicious) citrusy vibe.
Add blueberries: Gently fold in ½ cup of fresh or frozen blueberries to the dough before baking for a sweet-tart combo that tastes like summer in a cookie.
Glaze and dip: After glazing, dip half of each cookie in melted white chocolate and let it harden. It’s fancy without the fuss.
Make mini cookie sandwiches: Use two cookies and a dollop of lemon buttercream, vanilla frosting, or ice cream in the middle. Cute, tasty, and giftable.
