Imagine biting into a cookie that combines the gooey goodness of s'mores with the chewy perfection of a colossal-sized cookie. That's what this Colossal S'mores Cookie recipe brings to the table—campfire nostalgia baked right into a dessert that's impossible to resist. Whether you're hosting a summer BBQ, planning a cozy fall night in, or simply craving a decadent treat, these cookies are sure to satisfy. With rich chocolate chunks, melty marshmallows, and crunchy graham crackers, they capture everything you love about s'mores, but with a delicious cookie twist.
While I originally made everything from scratch, as you can see in the video below, I've since discovered a simpler solution: my convenient cookie mixes. You can follow the video to make it from scratch or read this step-by-step guide while you enjoy the ease of baking cookies with My Better Batch.
Ingredients
-
1 pkg Chocolate Chunk Cookie Mix
- 6 TBSP Unsalted Butter, Softened
- 1 Large Egg
- 1 Box Graham Crackers (1 cup of cookie crumbs for cookie dough, additional for cookie base)
- 3 Hershey Milk Chocolate Bars
- 18-20 Large Marshmallows
Directions
Preheat Your Oven and Prepare Baking Sheets
Preheat your oven to 375°F. Preheating your oven is a crucial step in baking, as it ensures that the temperature is consistent and hot enough to bake your cookies evenly.
For easy clean up, line your baking sheets with parchment paper.Combine Cookie Mix, Unsalted Butter, and Egg
In a large mixing bowl, combine the Chocolate Chunk cookie mix, softened unsalted butter, and egg.
If using a stand mixer, start the mixer on low speed to gently combine the ingredients. Once the ingredients begin to come together, increase the speed to medium and continue mixing until a dough forms. This should take about 2-3 minutes. The dough should be well-mixed and smooth, with no visible dry ingredients.
If you don’t have a stand or hand mixer, you can hand knead the dough - check it out in the “Bake with Me: Chocolate Chunk Cookie” video.Crush and Add Graham Crackers
I’ve found the easiest way to break apart graham crackers to make cookie crumbs is to place 8-10 squares in a Ziploc baggie and use a rolling pin to gently crush them.
You’ll need 1 cup of crushed graham crackers total. Once the squares are sufficiently crumbled, pour the cookie crumbs into the dough and mix to combine.Form The S’mores Cookies
There’s a reason we’ve named these colossal cookies - the final result will be huge! To prevent cookies from overlapping, don’t place more than 4-6 on a baking sheet.
Start by placing a graham cracker square on the baking sheet, followed by a square of Hershey’s chocolate.
Take one large marshmallow and squish it to form a square, then place on top of the chocolate.
Finally, take approximately 4 tablespoons of cookie dough and instead of rolling into a ball, flatten into a square. Place the flattened dough on top of the marshmallow, chocolate, and graham cracker formation, and wrap around the edges.Bake
The size of this cookie means that a longer than normal baking time will be needed.
Bake for 14-15 minutes at 375°F or until the edges of the cookie dough have set.
