Chocolate Lava Cookies

Chocolate Lava Cake - rich, decadent, with that ooey gooey center, now in the form of a cookie! Keep it simple and provide an impressive cookie worth sharing. Use a premade cookie mix to make the Chocolate Cookie Dough and fill with rich Chocolate Ganache and top with powdered sugar.

Chocolate Lava Cookies

(2) pkg Double Chocolate Chip Cookie Mix (prepared according to the package instructions)
2 Sticks of Unsalted Butter (16 TBSP)
2 Eggs
1 Cup Semi-Sweet Chocolate Chips
1/2 Cup Heavy Whipping Cream
Powdered Sugar

Ganache Center
In a small bowl, pour 1 Cup Semi-Sweet Chocolate Chips. In another small bowl, heat 1/2 Cup Heavy Whipping Cream to almost a boil. Do this on the stove-top or the microwave. Once hot, carefully pour the heavy whipping cream over the semi-sweet chocolate chips and allow to sit for about 1-2 minutes. Using a small whisk give it a stir until the chocolate ganache is completely smooth. Once smooth, place in the refrigerator for about 15 - 20 minutes to cool. The ganache should be "scoop-able" before handling again. After cooling, use a spoon to scoop about 1-2 tsp onto a lined cookie sheet. Once scooped, place into the freezer while making cookie dough. The ganache should harden up which will make it easier to place into the center of the cookies.

Cookie Dough
Keeping it simple, use a prepared cookie mix to prepare cookie dough. To the base of a stand mixer with the paddle attachment add:

(2) pkgs Double Chocolate Chip Cookie Mix
2 Eggs
2 Sticks Unsalted Butter (16 TBSP)

Turn mixer on medium low until dough forms which takes about 3-4 minutes. To make BIG chocolate-filled cookies use a 3 TBSP cookie scoop. Scoop all of the cookie dough to be ready for assembly.

Assembly
The chocolate ganache center has had been in the freezer for about 20 minutes and has hardened up. Roll each ganache piece into a ball and flatten each 3 TBSP scoop in the palm for your hand. Place a chocolate ganache center right in the middle. Just form that dough up around the chocolate ganache and roll into a ball making sure to fully cover the chocolate center.

Place 5 cookies onto a parchment lined cookie sheet and into a 375 degree oven and bake for about 12 minutes. Allow cookies to cool on a cooling rack for about 10 minutes. Cut some wax paper into a heart and place this right on top of the cookie and sprinkle some powdered sugar over the top.
