Are you a Swiftie with a sweet tooth? Get ready to embark on a delicious journey through the land of Taylor Swift and chai spices! Inspired by the singer-songwriter's love for cozy autumnal vibes, My Better Batch has created a recipe for irresistible chai cookies using our better than homemade cookie mix.
Just like Taylor's music, these cookies are a perfect blend of warmth, comfort, and a touch of magic. So, grab your favorite cardigan, put on "All Too Well," and let's bake!
Creating the ultimate chai cookie requires a foundation as exceptional as Taylor Swift's discography.
Before I dive in, it’s important to point out that you have two options: you can gather all the ingredients and make everything from scratch, as I did in the video above. But, after I made this video, I discovered an easier way and created my simple-to-use cookie mixes.
That's why I’m turning to My Better Batch's Classic Sugar Cookie Mix. It's the perfect canvas to which you’ll add bold chai spices. This mix isn't just any cookie mix; it's a shortcut to homemade perfection. The sweet, buttery base provides the ideal balance for the complex flavors of chai.

Step-By-Step Instructions for Making Chai Sugar Cookies
Preheat the Oven
Preheat the oven to 375°F.
Prepare the Cookie Dough
Combine My Better Batch Classic Sugar Cookie Mix, 8 TBSP Unsalted Butter, softened, and 1 Large Egg in a stand mixer bowl. Mix on medium-low speed for 2 minutes, or until well combined. Keep in mind this could take several minutes and may look like a dough will never form. Be patient, this process could take up to 2-3 minutes.
Slowly add the chai spice in - this is where the magic happens, infusing the dough with warm, aromatic flavors.
Don’t have a mixer? Simply roll up your sleeves and hand-knead the mix until a dough forms! Watch the Sugar Cookie Mix baking video to watch as I demonstrate the head-kneading technique.Prepare the Tart Pan and Fill with Dough
In the video, I use a tart pan with a removable bottom.
Using a tart pan with a removable bottom is a great choice for making cookie bars because it allows for easy and clean removal of the bars without the need to cut them directly in the pan.
The removable bottom ensures that the cookie bars retain their shape and presentation, as you can simply push the bottom up to release the entire batch at once. This feature minimizes the risk of breaking or crumbling the bars during transfer, making it perfect for serving at gatherings or packaging as gifts. Additionally, I’ve found that the even heat distribution of a tart pan helps achieve a consistent bake, ensuring that your cookie bars are perfectly cooked throughout.
Although the tart pan I use to make this recipe is nonstick, I do lightly grease it.
Fill the pan completely with the chai spice cookie dough, spreading it evenly to cover the entire surface.Bake
Bake for 20-23 minutes until the outside edges are set and the middle is no longer shiny.
Homemade Spiced Icing: A Step-by-Step Guide
Prepare the Icing
While the cookies are baking, prepare the icing.
To make a rich and flavorful spiced icing, start by sifting 2 cups of powdered sugar into a large mixing bowl to ensure a smooth texture.
Add 3/4 teaspoon of nutmeg and 1/4 teaspoon of cinnamon, blending these warm spices with the sugar.
Next, pour in 1 1/2 tablespoons of vanilla extract for a hint of sweetness and depth. Gradually add 6 tablespoons of heavy whipping cream, stirring continuously until the mixture is smooth and creamy.
The icing should be thick yet spreadable, perfect for glazing your chai sugar cookies with a delightful, spiced finish.Transform the Cookie Bar with Icing
Start by ensuring the cookie bar is completely cooled. This will prevent the icing from melting and running off.
Using a small spoon or a piping bag, apply a generous dollop of the spiced icing onto the center of the cookie bar. If using a spoon, gently spread the icing outward in a circular motion, letting it flow naturally toward the edges without going over. For a more precise look, use a piping bag to outline the edges first, then fill in the center with icing.
Apply all of the icing to the top of the bar before cutting and gently spread until even.
Once the icing is applied, you can leave it as is for a smooth finish or use a toothpick to create decorative swirls or patterns. Allow the cookie bar to sit at room temperature for the icing to set before serving. The result is a beautiful, glossy glaze that adds a sweet and spicy kick to your chai sugar cookies!
