Triple Chocolate Mint Cookies

These Triple Chocolate Mint Cookies are absolutely decadent, with just the right amount of minty flavor and the best part is - they're super easy to make.

Use a Double Chocolate Chunk Cookie Mix, add some crushed Oreo cookie crumbs and a little bit of peppermint flavor and dip each cookie into semi-sweet chocolate.

Cookie Dough:

1 pkg Double Chocolate Chip Cookie Mix (prepared according to package instructions)
3/4 tsp Peppermint Extract (divided)
1/2 Cup Crushed Oreos
1 (10 oz) bag Dark Chocolate Melting Wafers

Begin by mixing up the cookie dough. And, while you can use my Chocolate Sugar Cookie recipe (link to recipe) as a base for this recipe, you can take a shortcut by using a premade Double Chocolate Chip Cookie Mix. To the base of a stand mixer add:

1 pkg Double Chocolate Chip Cookie Mix (prepared according to package instructions)
1 egg + 1 stick butter (8 TBSP)

Mix on medium low speed until ingredients are just combined, no need to wait until your dough completely forms. Add mint extract and a little bit of crunch with the addition of Oreo cookie crumbs.

Oreo Cookie Crumbs

1/2 tsp Peppermint Extract
1/2 Cup Crushed Oreos (remove cream)

Turn the stand mixer back on medium low speed until your cookie dough forms. This can take a bit when using a premade cookie mix. Use a 2 TBSP scoop to scoop all of the cookie dough and place 8 cookies on a parchment-lined cookie sheet. Before they head into the oven simply roll the cookie dough in the palm of your hand to form a ball. Bake cookies at 375 degrees for 8-10 minutes.

Sometimes cookies that have a cocoa powder in the base can be tricky to tell when they are perfectly baked. These cookies will rise nicely and begin to crack on the top. Make sure that he edges are set. Take them out when they have begun to crack but within those cracks, a shiny texture is visible. Allow cookies to fully cool on a cooling rack for about 20 minutes.

Chocolate Coating

10 oz bag of Dark Chocolate Melting Wafers
1/4 tsp Peppermint Extract

In a small bowl, melt a 10 oz bag of Dark Chocolate Melting Wafers in the microwave following the instructions on the back of the bag. To that chocolate add 1/4 tsp Peppermint Extract and stir to fully combine. Finish the cookie off by dipping the bottom into the dark chocolate. Once the bottom has been dipped, place the cookies back on the cookie rack, bottom up, to allow the chocolate to set. This process takes about 15 minutes.
