Ingredients
-
1 pkg My Better Batch Double Chocolate Chip Cookie mix
- 1 large egg
- 8 TBSP unsalted butter, softened
- 1 bag chocolate melting wafers
- 1 bag mini marshmallows or dehydrated marshmallows
Directions
Double Chocolate Chip Cookie Recipe
Start by preheating your oven to 375°F and preparing two cookie sheets. For easy clean up, line each sheet with parchment paper.
In a large bowl, add 1 package Double Chocolate Chip Cookie mix, 1 large egg, and 8 tablespoons of softened unsalted butter.
You have two options here: hand kneading the dough or using a mixer. If you are using an electric stand or hand mixer, combine on medium speed for 2-3 minutes. You can see the entire process and follow along in the “Let’s Make It Together: My Better Batch Double Chocolate Chip Cookies” video.
Once the dough has been fully combined, begin to form the cookies. Take 2 tablespoons of cookie dough and roll gently into a ball. Place each ball of dough onto the prepared cookie sheets, 2 ½ inches apart.
Bake for 9-11 minutes at 375°F, or until the edges of the cookies have set. Then, allow to rest on the cookie sheets for 5 minutes before transferring to a wire cooling rack.
How to Melt Chocolate Wafers
It's best to wait until the cookies have completely cooled before melting the chocolate wafers.
Melting chocolate wafers is easy using the double boiler method. Place the chocolate wafers in a heatproof bowl. Fill a saucepan with about an inch of water and bring it to a gentle simmer.
Place the bowl of chocolate wafers in the saucepan. As the chocolate melts, stir continuously, allowing the gentle heat from the simmering water to create a smooth and glossy consistency.
Once the chocolate is fully melted, remove the bowl from the saucepan and use the chocolate immediately, as it will begin to cool and harden quickly!
Decorate the Chocolate Cookies
Dip each double chocolate chip cookie into the melted chocolate, ensuring a generous coating. While the chocolate is still warm, sprinkle mini marshmallows on top to create a delightful hot cocoa-inspired treat!
